Crispy Baked Zucchini Fries

A yummy, healthy pre-braai snack recipe from our guest blogger Part-Time Veggie!


Healthy recipes are the new black these days. Instagrammers have become so good at photographing their food that you get sucked into the raw chocolate tart abyss and for a moment you’re convinced you can create a masterpiece that looks just like their professionally captured creation. Then you try it and you end up with a comical copy that defines the phrase ‘nailed it’.

It can be quite intimidating. Luckily I don’t have those mad photography skills, so my recipes and pics err on the side of ‘real girl with passion’ rather than ‘unachievable gourmet goddess’.

That said, I follow some amazing foodies on Instagram and I am completely inspired by them. I always have about 20 recipes saved that I’m dying to try.

One of my favourite IGers is @chocolatecoveredkatie – she is a vegan who eats chocolate every single day, sometimes twice. Her recipes are all healthy but she gives you different options in case you want to be a rebel and use  white flour and sugar. Check her out, I guarantee you’ll love her.

The reason I mention her is that my crispy baked zucchini fries are inspired by her recipe, but since I’m not vegan I used eggs instead of milk and I made a few other adjustments. And just to prove my first point, they also flopped spectacularly because I put the oven on grill instead of bake and burnt the whole batch – here’s to keeping it real!

The few that I managed to salvage were amazing though. They’re a fantastic healthy side to serve with a plate of ribs or at a braai.

 Prep time: 20 minutes  |    Cooking time: 20 minutes

Ingredients

  • 6 small zucchini (aka baby marrows), sliced into fry shapes
  • 1/4 cup flour (I used a gluten free blend)
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • Sprinkling of herbs
  • 1/2 cup milk of choice
  • 1 cup cornflake crumbs (If you’re not worried about gluten you can use normal breadcrumbs)

Method:

Preheat oven to 200 degrees. Lightly grease a cooling rack, place it on a baking tray, and set aside. Set up an assembly line: flour and spices in one bowl, milk in another, and breadcrumbs in a third. Dip each zucchini stick in the flour, then the milk, then the breadcrumbs. Place on the cooling rack. Bake for around 20 minutes, or until desired crispiness is reached. Do not leave on grill by accident.
