Fluffy (Quick) Peanut Butter Cookies

It’s April already and winter is coming – and I honestly feel like I wrote these same words just 5 minutes ago instead of 12 months. I naively believed when I moved from London back to Cape Town that life would slow down. Instead, I watch with abject horror as the months rush by like a Kardashian chasing the perfect selfie. After 36 years, I’ve finally figured out that it’s not the city you live in that makes time go faster, it’s your age.

Remember how long a day at school was? One maths lesson was the equivalent of a 5-hour Dance Moms marathon. When we reach 30 we’re all like, pass the face cream made from tails of tadpoles that miraculously gives you skin like Kendall Jenner; but what we should be asking for is Doc from Back To The Future to come rewind our clocks.

Our lives are busy and it can be hard to keep up the pace. We get so caught up in trying to be everything to everyone that our health gets put on the back-burner, as we spend our limited time and energy on the things ‘that really matter’. But for now, in the spirit of making healthy quick and easy, here’s a great recipe for you to try. These take less than 5 minutes to make and 10 minutes to cook, so you can squeeze in a batch at almost any point in your saturated day. The only prerequisite is that you like peanut butter.

 Prep time: 8 – 10 minutes  |    Cooking time: 8 – 10 minutes

Ingredients

  • 1 cup natural, sugar free peanut butter
  • 1/3 cup raw honey
  • 1 large egg
  • 1 ½ tsp baking soda
  • 2 tbsp coconut flour
  • Handful of macadamia nuts (optional)

Method:

Instructions:

  1. Mix together peanut butter, honey, egg and baking soda.
  2. Sift and mix in coconut flour.
  3. Mix in nuts.
  4. Drop heaped tablespoons onto a greased baking tray, leaving plenty of room between spoonfuls as they expand quite dramatically.
  5. Bake at 180 degrees (150 in fan assisted oven) for 8 – 10 minutes or until golden brown.
  6. Glass of wine optional!
