VEGAN "MINCE" - filled with fibre, vegetables & protein!

As a vegetarian, I often miss the versatility that comes with meat mince (spag bol, tacos etc) and I am not a big fan of the processed, vegan mince that is out there. This quick veggie mince is packed with protein, veggies & fibre – AND IT TASTES JUST LIKE MEAT!! (I promise, no eye rolls please).

It’s a great way to add more plants to your diet & make your #TacoTuesday a bit healthier!
You can also make this mince in big batches to keep in the freezer for next time – easy veggie meal prep!

TO MAKE:
-    Brown some onions, carrots & celery in a pan
-    Add some chopped mushrooms (you can mix the mushrooms first in the MagiMix to create a “mince-like” consistency) & lightly cook with the onions, carrots & celery (I prefer not to over cook them so that the mushrooms retain some “firmness”)
-    Stir in some tomato & onion mix (we make our own from scratch, but you can use tinned tomato & onion mix, just be careful to use one that has no added sugar)
-    Stir in some cooked lentils (we make these in batches beforehand and freeze in individual portions – we just remove from the freezer the night before and allow to defrost in the fridge before throwing it in the pan)
- Stir until all ingredients are heated straight through!

You can throw this onto some gluten-free spaghetti (I used nutritional yeast for cheese) or anywhere you normally eat mince; but this week we added them to tacos with some lightly cooked peppers and smashed avo - see below pic! 

You could add cheese if you wanted! (no cheese for me, not because I am a health-freak but because I am lactose-intolerant and that sadly is life)
