Egg Breakfast Muffins

One of our Full Circle Wellness supporters, Candice, sent us her awesome, quick recipe for Egg Breakfast Muffins! No excuse to skip breakfast as you can make them the night before!

“Made an amazingly healthy and yummy breakfast this morning which is super easy and quick. Maybe something you can tell your girls if they struggle on what to eat for brekkie. It’s egg muffins. Any veg. I used spinach (wilted), mushrooms (with onions &garlic lightly dry fried), red and yellow peppers. All cut into very small cubes. Then spray n cook a muffin tray. Spoon in 1 tbs pepper, 1tbs mushroom&onion mix, pinch of spinach in each. whisk together eggs (as many as the muffins you making) and pour to fill cups. I added a sprinkle of cheese on top and baked for 15-20min on 180 degrees”
