When I was suffering though the cold months of a Texas winter I stumbled across this adorable dish. I had invited one of my friends over for brunch and made this for the two of us. It was absolutely perfect. I made it with a side of cauliflower mashed potatoes as well. Mmmm.
Ingredients:
2 to 4 people (4 if you have other sides)
Heat oven to 205˚C.
Slice the bell pepper in half and remove the center. Fill the bell pepper with artichoke hearts, chives, and cheese. Crack the egg into the pepper. Top it with pepper, chives, herbs, and more cheese. Bake for approximately 20 minutes, until the egg is cooked to your liking.
