Perfect Protein Breakfast – Frittata

Low carb, high protein veggie packed Frittata’s!

Perfect for on-the-go breakfasts, these little guys freeze well and pack a hunger-satisfying punch!

  • Chop up veggies of your choice (I use tomatoes, onions, green peppers and spring onions)
  • Mix with 6 eggs
  • Add a splash of (rice) milk
  • You can add ham if you are feeling adventurous
  • Pour into muffin-lined baking tray (I use the linings as the eggs can make the muffin tray sticky and it’s hell to clean afterwards)
  • Cook for 10-15mins until they look cooked (poke with fork, if they are still wet inside, leave for a bit longer)
  • Leave to cool on baking tray
  • Makes approx 12

Eat once cool, or save in the fridge/freezer for a perfect dine-and-dash breakfast! No more excuses!
