Pizza & Chips — WHAT?!?

Here is your oh-so-satisfying, and healthy PIZZA recipe…

I found this pizza recipe in my not-so-far-off-college days from Blogilates and it quickly became a regular meal for me. It is quick and easy and healthy. I’d often make it, eat half, and then pack the other half in a container and take it to school with me for lunch the next day. I have modified the recipe slightly from the way I found it – I hope you enjoy as much as I do 🙂
Makes enough for 2 people or 2 meals.

Oatmeal Crust:

  •     1 cup dried oats (instant or rolled – I used rolled)
  •     1/2 cup egg whites or 2 whole eggs
  •     1 tbsp ground flax seed or 1 tbsp chia seeds
  •     1/4 to 1/2 cup water (approximate)
  •     Add spices! Garlic, oregano, or basil to add more flavor 🙂

Toppings:

  •     Marinara Sauce
  •     Your choice of cheese – I used Mozzarella
  •     Any Veggies! onion, tomatoes, bell pepper, mushrooms
  •     Add Greens, too! kale, spinach, avocado
  •     And lean protein! go with chicken breast over sausage or pepperonis

Directions:

  • Go ahead and turn the oven on to 175 degrees Celsius.
  • Mix the crust ingredients into a bowl and let sit for 5 minutes.
  • Pour into a pan on medium heat after spraying with olive oil.
  • Let it harden until you are able to flip it over. (Sometimes it can be fragile, so be careful.)
  • Put foil onto a baking sheet and transfer the crust to the baking sheet.
  • Top the crust with marinara sauce, cheese, and veggies/greens/protein.
  • Put the pizza in the oven for about 5-8 minutes until the cheese has melted and the  veggies have roasted a bit.
  • Remove from the oven, allow it to cool, slice into fours & enjoy!

Ingredients:

  • Cauliflower
  • Olive Oil, enough to coat cauliflower
  • Sea Salt + Pepper to taste

Directions:

  • Turn oven to broil.
  • Wash and cut cauliflower into small pieces.
  • Place in a bowl and coat the cauliflower with olive oil, sea salt, and pepper.
  • Broil for 10-15 minutes, check to make sure they are crispy, but not burnt.

No more guilty pleasures. Enjoy!
