Recipe of the Month: Mac and Cheese with lentils

Inspired by my fabulous friend and registered dietician Katie Pereira, Full Circle Wellness will be now posting a regular “Recipe of the Month” here on our blog! Approved by the Heart and Stroke Foundation and from their website, these recipes will seek to inspire clients (and chefs!) to cook healthier meals for themselves and their family!

Anyone who knows me, knows that Mac and Cheese is my absolute weakness! Given I am allergic to gluten and dairy, it’s not the best combination for me, but I do like to treat myself from time to time!

This fantastic recipe adds lentils to the mix, which helps slow down the digestive process, which in turn slows down the sugar/glucose energy release into your body. This means your energy levels are sustained for longer and you feel fuller for longer (this is what people refer too as “Low GI” – it means the food has a lower Glucose Index, which means it is absorbed into your bloodstream slower). Using reduced fat cheese, or even Mozzarella can help lessen the fat content.
