Wheat-Cane Sugar-Dairy Free Apple Sponge Cake

This is a delicious and quick cake takes minutes to make! I was privileged to be taught the recipe by Gayleen from Gayleen’s Decadence, a raw food company that manufactures gluten-dairy-sugar free chocolates! Yum!

  • Blend 4x apples together in a blender
  • Add 3x eggs and 1x Tablespoon raw organic honey
  • Blend together again
  • Mix in bowl with 2x Tablespoons Rice Flour & 1 teaspoon Bicard Soda/Baking Powder
  • Add the juice of one large orange
  • Place in bain marie (I just made my own with a baking tray filled with water, enough so that the bottom of the bowl was covered, but my bowl was not floating).
  • Cook for 60mins (recipe said 60mins, but I found mine took about 90mins to get right)

Tips:

  • Make sure your baking bowl is a deep one – it does not have the same consistency as cake, so it can’t be too thin
  • Tastes event better the next day – pop in the fridge and once it’s cooled, the texture becomes more cake-like!
  • Garnish with apple-slices (you can use tinned slices, but these can be high in sugar)
